Follow the Yogurt and Quark Cheese Bread recipe and let the bread rise. Deflate. Divide the dough in 18 equal portions. Roll each portion in a 20 cm-long cigare shape and knot. Place on a greased metal sheet, cover with a cloth and let rise until they double in volume. Brush with yolk and bake at 350 F (190 C) for 15 to 18 minutes, until golden.
