Vegetable Soup with Cheeseballs

Ingredients

  • 1 medium-sized zucchini (do not peel)
  • 2 big peeled potatoes
  • 3 medium-sized peeled carrots
  • 1 big onion
  • 2 celery branches
  • 4 ½ cup boiling water (1 L)
  • 2 teaspoons salt (10 ml)
  • ¼ teaspoon pepper (1 ml)
  • ½ teaspoon basil (2 ml)
  • 2 tablespoons butter (30 ml)
  • ½ cup milk (125 ml)

 

Cheeseballs:

Preparation

  1. Grate vegetables in a 4L saucepan.
  2. Add boiling water, seasonings and butter.
  3. Cover and simmer for 15 to 20 minutes, until vegetables are tender.

 

Cheeseballs:

  1. Mix all the ingredients with blender until creamy.
  2. Teaspoon by teaspoon, put the mixture in the simmering soup.
  3. Cover and let simmer for 15 minutes.
  4. Add ½ cup of Liberté organic milk and complete seasoning.
