VIVAÏ’s Lemon Meringue Pie

  1. Preheat oven to 200°F (95°C). Prepare a baking sheet with parchment paper.
  2. In a large bowl, mix the lemon juice, lemon zest and 4 egg whites. Using an electric mixer, beat the egg mixture until soft peaks form.
  3. Continue beating on high speed, and slowly add the sugar to the egg mixture and beat for 10 minutes or until sugar has completely dissolved.
  4. Spread meringue into twelve even circles on the cookie sheet.
  5. Bake for 1h30 or until meringues are dry and crackled. Cool on a rack.
  6. During this time, melt the butter.
  7. In a small bowl, mix the graham crumbs, the lemon juice and the melted butter.
  8. To make the tarts, pour ¼ cup of Mediterranean Lemon yogourt onto each meringue and sprinkle with graham crumb mixture.
